Founded in 2018 by Matt Hobbs, whose career spans The Ivy, Scott’s, Le Caprice and The Groucho Club, Copper Beech combines cultural judgement with commercial discipline and operational rigour.

Jonno Forbes leads operations, bringing senior experience from The Fat Duck and the openings of Dinner by Heston Blumenthal in London and Melbourne, ensuring projects are built to perform in practice, not just in concept. Fia Freeman leads strategy and the project portfolio, guiding clients from initial discussion through to successful delivery.

Together, the leadership team brings a unique combination of culture, commerce and operations.

Matt Hobbs
Founder

Founder and CEO, Matt Hobbs brings 25 years experience across membership and hospitality, both regionally and throughout the Middle East. His impressive portfolio includes The Ivy, Soho House New York, Scott’s, Le Caprice and the Birley Group, before becoming Chief Executive of the Groucho Club.

Matt has worked internationally alongside his exceptional, full time team at Copper Beech, collaborating closely with property developers, investment funds, global-leading design partners and more.

Fia Freeman
Chief Commercial Officer

Overseeing Copper Beech’s global project portfolio, Fia is responsible for translating ambitious ideas into successful, fully established destinations. Guiding projects seamlessly from early concept through to opening and refinement.

Fia began her career at Caprice Holdings, where she played a key role in the high-profile openings of Sexy Fish (Miami), Scotts (Richmond), Bacchanalia, and Scotts (Saudi Arabia). Her deep operational grounding, international perspective & meticulous attention to detail underpin Copper Beech’s reputation for delivering world class projects with precision, creativity & integrity.

Jonno Forbes
Chief Operating Officer

Jonno leads the operations and execution at Copper Beech, partnering with established and emerging private members' clubs, hotels and restaurants.

Previously Operations Director at Artfarm, he oversaw an international portfolio of award-winning hospitality destinations, overseeing The Fife Arms and Fish Shop in Scotland and leading the relaunch of Da Costa and Roth Bar in Somerset, Cantina in Menorca and Chesa Marchetta in Switzerland. Before Artfarm, Jonno was Director of Business Development at Caprice Holdings, driving strategic growth across its London portfolio.

During more than a decade with The Fat Duck Group, opening Dinner by Heston Blumenthal at Mandarin Oriental Hyde Park and launching its Melbourne counterpart at Crown Casino.
